- Heat the oil in a large saucepan. Add the onions and fry until they begin to soften.
- Add the garlic, beans, water and stock and bring to the boil. Simmer for 5 minutes.
- Whizz with a hand-held blender. Add the lemon juice and season with salt and pepper.
- Serve with some freshly chopped parsley on top and some good, crusty bread.
