- Cook the rice, see this video
- Toss the sweet potato, onion, cumin, coriander and turmeric in a little oil.
- With the crisper tray removed, air fry at 200°C, stirring occasionally, for 20 minutes, or until the sweet potato is tender (test a few bits).
- Add the coconut milk and lentils. Air fry for 5 minutes or until warmed through. Stir in half of the lime juice.
- Serve with the rice, coriander and the rest of the lime juice to taste.
