Sweet Potato & Lentil Curry – Air Fryer Recipe

method

  1. Cook the rice, see this video
  2. Toss the sweet potato, onion, cumin, coriander and turmeric in a little oil.
  3. With the crisper tray removed, air fry at 200°C, stirring occasionally, for 20 minutes, or until the sweet potato is tender (test a few bits).
  4. Add the coconut milk and lentils. Air fry for 5 minutes or until warmed through. Stir in half of the lime juice.
  5. Serve with the rice, coriander and the rest of the lime juice to taste.

Single basket?
You’ll need to cook your rice in a saucepan.

Ingredients

3/4 mug (190g) basmati rice
2 medium sweet potatoes, cut into small chunks
1 onion, sliced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground turmeric
400ml tin coconut milk
400g tin cooked green lentils, rinsed and drained
juice of a lime
1 tablespoon freshly chopped coriander
