Ok so there’s a caveat from the get go, we are no suggesting that you can survive on Gingerbread men but they do make life just that little bit more fun. You do NOT need a gingerbread man cutter, neither do you need to be an art student. Just draw your own gingerbread family on some paper, cut them out and then, when you have rolled out the dough, cut around them with a pointed knife.
If you do not have an icing bag, make one out of greaseproof paper. Take
a square piece of greaseproof paper, make a cone and sellotape together. Put the icing inside and then snip o the tip of the cone. Screw the top of the cone around and squeeze. The icing should come out of the hole. Make sure the top end is screwed tight, or the icing will come out of the wrong end!
- Grease a baking tray with some butter.
- Put the butter and sugar in a bowl and beat together with a wooden spoon.
- Add the egg and beat well. Add the golden syrup and beat again until smooth.
- Add the flour and ground ginger, mix together with a metal spoon. The mixture will be quite stiff. Turn out onto a floured surface and knead together. Cover with cling film and leave 1 hour in the fridge.
- Put the oven on to heat at 180°C fan oven/200°C/Gas 6.
- Place the dough on a floured surface and roll out. If you do not have a rolling pin, use a glass bottle. The dough should be about 1cm thick. Place the ginger people templates on the dough and cut out with a pointed knife. Squash together the spare pieces, re-roll and cut out some more men.
- Place the men on the baking tray, cook for 8 minutes. If you only have one tray, the dough is fine to wait until each batch is cooked.
- Decorate if you wish. To make the icing, simply mix together the icing sugar and water.
