Sugar-free Gluten-free Persian Lamb Patties

method

  1. Preheat the oven to 180ºC fan oven/200ºC/gas 6.
  2. Thinly slice the potatoes, mix with the olive oil and season well with salt and pepper.
  3. Spread out on 2 large roasting trays. Bake in the oven for 30–40 minutes until they are browned and crispy.
  4. Mix the tzatziki ingredients together.
  5. Put the pistachios in a food processor and blitz until quite fine but not dust. Add the onion and blitz. Add the rest of the pattie ingredients, season well with salt and pepper, and pulse a few times to mix.
  6. Form into 8 patties.
  7. Heat the oil in a large frying pan and cook, for 10 minutes on a medium heat, until browned on both sides and cooked through.
  8. Serve with the salad leaves, crispy potatoes and tzatziki.

Ingredients

  • 5 medium potatoes
  • 2 tablespoons olive oil

Tzatziki

  • 4 tablespoons yoghurt
  • juice of a lime
  • 1/3 grated cucumber

Patties

  • 100g pistachios
  • 1 onion
  • 1 egg yolk
  • 500g minced lamb
  • 2 teaspoons sumac
  • 1 tablespoon freshly chopped coriander
  • 1 tablespoon freshly chopped basil
  • zest of a lime
  • oil to fry
  • salad leaves
