- Preheat the oven to 180ºC fan oven/200ºC/gas 6.
- Thinly slice the potatoes, mix with the olive oil and season well with salt and pepper.
- Spread out on 2 large roasting trays. Bake in the oven for 30–40 minutes until they are browned and crispy.
- Mix the tzatziki ingredients together.
- Put the pistachios in a food processor and blitz until quite fine but not dust. Add the onion and blitz. Add the rest of the pattie ingredients, season well with salt and pepper, and pulse a few times to mix.
- Form into 8 patties.
- Heat the oil in a large frying pan and cook, for 10 minutes on a medium heat, until browned on both sides and cooked through.
- Serve with the salad leaves, crispy potatoes and tzatziki.
