Simple Tomato Soup – Air Fryer Recipe

method

  1. Toss the onion, tomatoes and whole garlic in a little oil. Season with salt and pepper, then air fry at 200°C for 10 minutes, or until the onions are browned a little.
  2. Tip the contents of the air fryer into a large bowl. Squeeze the garlic from its skin, add the rest of the ingredients and blitz with a handheld blender.
  3. Serve with crusty bread.

Ingredients

1 red onion, cut into wedges
250g cherry tomatoes
1 clove garlic, left whole and unpeeled
1 veg stock cube
1 mug (300ml) boiling water
1 tablespoon freshly chopped basil
2 tablespoons crème fraîche
crusty bread
