method

  1. Fill a saucepan with enough water to easily cover your pasta when it is cooking. Add a pinch of salt and bring to the boil. Add the pasta and simmer for 8 minutes.
  2. Using a colander, drain and return to the pan.
  3. Meanwhile, heat the oil in a large frying pan. Add the sausages and fry until they begin to brown.
  4. Add the spring onions and fry for 1 minute.
  5. Add the tomatoes and peas and mix together.
  6. Add the tomato purée, water and stock and bring to the boil. Turn down to simmer for 2 minutes.
  7. Add to the drained pasta and mix together. Season with salt and pepper.

  • 2 mugs (200g) pasta (we used fusilloni)
  • 2 tablespoons olive oil
  • 8 sausages, each cut into 4
  • 1 bunch spring onions, chopped
  • 400g cherry tomatoes, halved
  • 2 mugs (300g) frozen peas, defrosted
  • 2 tablespoons tomato purée
  • 1⁄2 mug (150ml) water
  • 1 vegetable stock cube
