- Fill a saucepan with enough water to easily cover your pasta when it is cooking. Add a pinch of salt and bring to the boil. Add the pasta and simmer for 8 minutes.
- Using a colander, drain and return to the pan.
- Meanwhile, heat the oil in a large frying pan. Add the sausages and fry until they begin to brown.
- Add the spring onions and fry for 1 minute.
- Add the tomatoes and peas and mix together.
- Add the tomato purée, water and stock and bring to the boil. Turn down to simmer for 2 minutes.
- Add to the drained pasta and mix together. Season with salt and pepper.
