- Put the pasta on to cook. Drain the water off, keeping 1/2 a mug of water for later. Return the pasta to the pan.
- Heat the oil in a wok, add the onions and chilli and fry until the onions begin to soften.
- Add the passatta, sugar and cinnamon and simmer for 2-3 minutes.
- Add the chicken, mix well and simmer for 4-5 minutes, making sure all the chicken is cooked. Season well with salt and pepper.
- Add the pasta and basil to the wok, together with a little of the reserved liquid if the mixture is a too dry.
- Serve with the grated parmesan over each portion.
