Paneer Korma Curry

method

  1. Heat the oil in a frying pan. Add the onions and fry until they begin to brown on the edges.

  2. Add the paneer and garlic and fry for one minute.

  3. Add the mushrooms and fry for 1 minute.

  4. Add the flour and mix well.

  5. Crumble in the stock cube and add the water and curry paste. Bring to the boil and then turn down to simmer for 5 minutes.

  6. Meanwhile, put the rice on to cook. See p27.    

  7. Add the spinach to the frying pan and cook for 30 seconds.

  8. Serve with the rice.

Ingredients

  • 1 tablespoon olive oil
  • 1 red onion, sliced
  • 225g paneer cheese, cut into cubes
  • 2 cloves garlic, chopped    
  • 250g mushrooms, sliced
  • 1 tablespoon plain flour
  • 1 vegetable stock cube
  • 1 mug (300ml) water
  • 2 tablespoons Korma curry paste
  • 150g fresh spinach
  • 1 1/2 mugs (375g) basmati rice
