Mix together the dressing ingredients.

Mix the salad ingredients in a bowl. Add the dressing and mix.

Heat the oil in a frying pan and loosely place in the grated potato. Season with salt and pepper. Fry on each side for 3–4 minutes until golden brown. Take out of the pan and put on the plate.

Add the mackerel to the pan, season with salt and pepper and fry for about 1 minute on both sides until lightly browned.

Serve on top of the rosti and with the salad.
