Mushroom & Caramelised Onion Pasta

method

  1. Put the pasta in a large saucepan of boiling, salted water. Simmer for 8 minutes. Drain and return to the pan.
  2. Meanwhile, heat the oil in a large frying pan, or wok, and fry the onion for 8–10 minutes on a medium heat, until it browns and is caramelised. Remove from the pan.
  3. Add the mushrooms and fry until they begin to brown.
  4. Add the lemon zest and cashews. Fry for 1 minute.
  5. Add the pasta, spinach and onion to the pan.
  6. Season with salt and pepper.

  • 2 mugs (200g) pasta (we used fusilli)
  • 2 tablespoons olive oil
  • 250g mushrooms, sliced
  • 1 small red onion, sliced
  • 1⁄2 mug (90g) cashew nuts
  • zest of 1⁄2 lemon
  • 100g fresh spinach, chopped
