Mexican Bean & Sausage Stew – Air Fryer Recipe

method

  1. Remove the crisper tray from one basket. Add the tinned tomatoes, smoked paprika, ground cumin, ground coriander and honey.
  2. If your beans come in unsalted water, add the beans with their water directly to the sauce. If your beans are in salted water, drain and rinse them, then add the beans along with a quarter of a tin’s worth of fresh water. Air fry at 200°C for 20 minutes, or until the sauce is hot.
  3. Meanwhile, in the second basket, air fry the sausages, onion and red pepper at 200°C for 20 minutes, or until everything is
    nicely browned.
  4. Sausage internal temperature 71°C
  5. Once cooked, remove the sausages and cut into chunks.
  6. Add the sausage pieces and roasted vegetables to the basket with the sauce. Stir everything together and serve with
    crusty bread.

Single basket?
At the beginning, air fry your sausages, onion and red pepper and set to one side, until you add the sausages back in at the end.

6 sausages
1 onion, cut into wedges
1 red pepper, cut into chunks
