Greens Risotto – Air Fryer Recipe

method

  1. Place a loaf tin in your air fryer. Add the butter and leeks and air fry at 200°C for 5 minutes, or until the leeks begin to brown.
  2. Add the rice, water and stock cube. Cover tightly with foil and air fry for 18 minutes, or until most of the liquid has been absorbed into the rice.
  3. Carefully remove the foil and add the broccoli. Replace the foil and air fry for another 6 minutes.
  4. Stir in the Philadelphia cream cheese and kale. Cover again and air fry for 3 minutes.
  5. Serve with the cheese on top.

  • 25g butter
  • 1 medium leek, sliced
  • 3/4 mug (190g) basmati rice
  • 1 1/2 mugs (450ml) boiling water
  • 1 veg stock cube, crumbled
  • 100g sprouting broccoli, roughly chopped
  • 100g garlic and herb cream cheese
  • 50g kale, roughly chopped
  • 150g Cambazola or Brie, sliced
