Gluten Free Orange cookies with Polenta

method

  1. Put the polenta, rice flour, ground almonds, baking powder, butter and sugar in a food processor and whizz until you have something resembling breadcrumbs. Alternatively rub in the butter by hand.
  2. Add the orange rind and egg and mix to a soft dough. Roll into a 30cm long sausage, cover with cling film and leave in the fridge for 1 hour.
  3. Preheat the oven to 180ºC fan oven/200ºC/gas 6.
  4. Cut the dough into 1.5cm disks, press in the flaked almonds and place on a baking sheet. Bake for 12 minutes, the cookies should be lightly browned.

  • 1 mug/150g polenta (polenta is often sold as corn maize)
  • 1/3 mug/50g rice flour
  • 1/2 mug/50g ground almonds
  • 1 teaspoon gluten free baking powder
  • 100g butter, measure using the packet
  • 1/2 mug/75g icing sugar
  • grated rind of an orange
  • 1 egg, beaten
  • 25g flaked almonds
