- Put the polenta, rice flour, ground almonds, baking powder, butter and sugar in a food processor and whizz until you have something resembling breadcrumbs. Alternatively rub in the butter by hand.
- Add the orange rind and egg and mix to a soft dough. Roll into a 30cm long sausage, cover with cling film and leave in the fridge for 1 hour.
- Preheat the oven to 180ºC fan oven/200ºC/gas 6.
- Cut the dough into 1.5cm disks, press in the flaked almonds and place on a baking sheet. Bake for 12 minutes, the cookies should be lightly browned.
