Cod Ratatouille

method

  1. In a mixing bowl, combine the ratatouille ingredients. Season well with salt and pepper.
  2. Divide the mixture between the two baskets of your air fryer and air fry at 200°C for 15 minutes, or until the vegetables begin
    to brown.
  3. Place the cod steaks on top of the cooked vegetables. Spray with a little oil, season with pepper, and air fry for 8 minutes, or until the cod is cooked through and begins to flake
    a little.
  4. Internal temperature 63°C
  5. Serve with the anchovies on top of the cod.

Ratatouille

  • 1 onion, cut into wedges
  • 1 courgette, cut into chunks
  • 1 red pepper, cut into small chunks
  • 125g mushrooms, halved
  • 2 cloves garlic, finely grated
  • 1 tablespoon dried basil
  • 12 black olives, halved
  • 3 tomatoes, chopped
  • 1 tablespoon olive oil
  • 2 tablespoons cider vinegar

 

  • 2 cod steaks
  • 8 anchovy fillets
  • 2 cloves garlic, finely grated
  • 2 tablespoons tikka curry paste
  • 400ml tin coconut milk
  • 4 tablespoons ground almonds
  • 1 tablespoon freshly chopped coriander
