- Beat the butter and sugar together until smooth.
- Add the egg, vanilla and almond extract. Beat together.
- Add the flour, cherries and pistachios. Mix together to form a firm dough. Form into a long sausage and cover with clingfilm. Refridgerate for an hour.
- Preheat the oven to 180ºC fan oven/200ºC/gas 6. Grease 2 baking trays.
- Cut the dough into 1/2cm slices and place on the trays. It should make about 30 cookies.
- Bake for 12 minutes. Leave to cool.
- Melt the white chocolate in a bowl over a pan of simmering water. Once the cookies are cooled, dip one end into the melted chocolate. Place on a sheet of greaseproof paper until the chocolate has set.
