- Preheat the oven to 180ºC fan oven/200ºC/gas 6. Grease and line a 20 x 30cm baking tray.
- Heat the butter in a small pan and allow to bubble gently until it begins to turn brown. Take off the heat and allow to cool.
- In a bowl, mix together the sugar, flour and ground almonds. Add the egg whites and beat until smooth.
- Gradually add the melted butter, beating at the same time. Add the vanilla and almond extract and beat well.
- Pour into the lined baking tray and even out. Sprinkle the almonds over the top.
- Place in the oven for 20 – 25 minutes, The top should be lightly browned and the mixture spring back when pressed.
- Leave to cool before cutting into any shape you like!
