method

  1. Preheat the oven to 180°C fan/200°C/gas 6.
  2. Heat the oil in a frying pan and add the onion and garlic. Fry until they begin to brown.
  3. Add the mushrooms and fry for 1 minute.
  4. Add the tomatoes, beans, stock, water and tomato purée. Bring to the boil and season well with salt and pepper.
  5. Pour into a casserole dish.
  6. Arrange the sliced potatoes on top. Drizzle with the olive oil and season well with salt and pepper.
  7. Bake in the oven for 45 minutes.

  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 1 clove garlic, sliced
  • 4 tomatoes, chopped
  • 125g mushrooms, sliced
  • 400g tin cannellini beans, drained and rinsed
  • 1 veg stock cube
  • 1/2 mug (150ml) water
  • 2 tablespoons tomato purée
  • 2 medium potatoes, sliced
  • 1 tablespoon olive oil
