- Preheat the oven to 180°C fan/200°C/gas 6.
- Heat the oil in a frying pan and add the onion and garlic. Fry until they begin to brown.
- Add the mushrooms and fry for 1 minute.
- Add the tomatoes, beans, stock, water and tomato purée. Bring to the boil and season well with salt and pepper.
- Pour into a casserole dish.
- Arrange the sliced potatoes on top. Drizzle with the olive oil and season well with salt and pepper.
- Bake in the oven for 45 minutes.
