Quick Chicken Pasta recipe

method

  1. Put the pasta on to cook. Drain the water off, keeping 1/2 a mug of water for later. Return the pasta to the pan.
  2. Heat the oil in a wok, add the onions and chilli and fry until the onions begin to soften.
  3. Add the passatta, sugar and cinnamon and simmer for 2-3 minutes.
  4. Add the chicken, mix well and simmer for 4-5 minutes, making sure all the chicken is cooked. Season well with salt and pepper.
  5. Add the pasta and basil to the wok, together with a little of the reserved liquid if the mixture is a too dry.
  6. Serve with the grated parmesan over each portion.

  • 2 mugs pasta
  • 1 tablespoon olive oil
  • 1 red onion, sliced
  • 1 fat red chilli, thinly sliced
  • 500g carton passatta
  • 1 teaspoon sugar
  • 1 teaspoon ground cinnamon
  • 3 chicken breasts, cut really thinly
  • 1/2 mug grated parmesan
  • salt and pepper
  • 1 tablespoon freshly chopped basil
