Pulled Pork Baps with blue cheese coleslaw

In prep for the rainy weekend.
We have looked at the weather forecast for the weekend and we are pretty sure you will want to be staying indoors for this one. So invite some friends around and cook this lovely pulled pork recipe and watch the rain trickle down the window and feel smug that you haven’t tried to have a BBQ and are getting soaked in the rain.

  1. Put the meat in a greased roasting pan. Put 2 1/2 mugs of water in the pan. Sprinkle over the spices and honey and season with salt and pepper. Put a lid on the pan, or cover with foil, and roast in the oven for 1 hour. Turn down the heat to 140ºC fan oven/160ºC/gas 4 and roast for a further 2 hours.
  2. Mix the coleslaw ingredients together immediately before serving.
  3. Take the meat out of the oven and pull apart with a couple of forks. Pour over the juices from the pan and serve with the bread and the coleslaw.

Ingredients

  • 1 kg pork shoulder
  • 1 tablespoon cumin
  • 1 tablespoon coriander
  • 1 tablespoon honey
  • Crusty bread/bread rolls

Coleslaw

  • 2 little gem lettuce, thinly sliced
  • 1 golden delicious apple, cut into thin sticks
  • 125g blue cheese, crumbled
  • 1 celery heart, thinly sliced
  • 1 tablespoon honey
  • juice of a lemon
  • 2 tablespoons olive oil
