Lemon Chicken Pie Recipe

method

  1. Preheat the oven to 200ºC fan oven/220ºC/gas 7.
  2. Heat the oil in a frying pan. Add the onions and fry until they begin to soften.
  3. Add the chicken and fry until it is no longer pink.
  4. Add the pine nuts, raisins, allspice, parsley, lemon zest and juice and the feta. Mix together and take off the heat.
  5. Unroll the pastry and cut it into four. Divide the chicken mixture between the four pieces of pastry. Brush the edges with water. Fold over to make 4 patties, pinching together to seal them. Place on a baking sheet and brush with the beaten egg.
  6. Place in the oven for 25 minutes or until the pastry is puffed up and nicely browned.
  7. Serve with salad.

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 200g minced chicken or turkey mince or 1 chicken breast, finely chopped
  • 1 tablespoon pine nuts
  • 1 tablespoon raisins
  • 1/2 teaspoon ground allspice
  • 1 tablespoon freshly chopped parsley
  • zest and juice of 1/2 lemon
  • 100g feta cheese, crumbled
  • one sheet ready rolled puff pastry
  • 1 beaten egg
  • salad to serve
