- Put the potatoes and broccoli stalks into a pan of boiling water, bring to the boil then turn down to simmer for 5 mnutes. Add the broccoli florets and peas and simmer for a further 5 minutes. Drain and mash roughly with the butter.
- Dip the cod fillets in the beaten egg and then into the coconut. Heat the oil in a frying pan and cook the cod, on a medium hea,t until the fish is browned on the outside and cooked through. Should take about 5 minutes, depending on the thickness of the fish.
- Remove the fish from the pan and add the sauce ingredients. Allow to simmer for 2 minutes. The sauce should thicken slightly.
- Serve with the fish and the mash.
