Gluten-free Coconut Cod with lemon sauce and broccoli mash

method

  1. Put the potatoes and broccoli stalks into a pan of boiling water, bring to the boil then turn down to simmer for 5 mnutes. Add the broccoli florets and peas and simmer for a further 5 minutes. Drain and mash roughly with the butter.
  2. Dip the cod fillets in the beaten egg and then into the coconut. Heat the oil in a frying pan and cook the cod, on a medium hea,t until the fish is browned on the outside and cooked through. Should take about 5 minutes, depending on the thickness of the fish.
  3. Remove the fish from the pan and add the sauce ingredients. Allow to simmer for 2 minutes. The sauce should thicken slightly.
  4. Serve with the fish and the mash.

Mash

  • 4 medium potatoes, peeled and cut into 2cm chunks
  • 1 small head broccoli, stalk chopped and head cut into florets
  • 2 mugs defrosted frozen peas
  • 25g butter, measure using packet
  • 4 cod fillets
  • 1 beaten egg
  • 4 tablespoons dessicated coconut
  • salt and pepper
  • oil to fry

Sauce

  • juice of a lemon
  • 4 tablespoons light brown sugar
  • 2 tablespoons water
  • salt and pepper
