Canellini Bean & Mango Salad with Fried Halloumi

method

This is a good, quick and easy, Saturday lunchtime dish. The mango and lime dressing is so fresh and delicious.

  1. Mix together the dressing ingredients and set to one side.
  2. Heat the oil in a small frying pan and fry the halloumi on a fairly high heat, until it is browned on both sides, and season. Remove from the pan and chop into small cubes.
  3. Mix together the tomatoes, peppers, mango, coriander and beans and season well. Add the halloumi and mix.
  4. Serve everything together and drizzle the dressing over the top.

 

Ingredients

Dressing

  • 3 tablespoons mango chutney
  • 2 tablespoons olive oil
  • juice of a lime
  • 1 tablespoon olive oil
  • 250g pack of halloumi, sliced

Salad

  • 4 plum tomatoes, roughly chopped
  • 1 red pepper, roughly chopped
  • 1 ripe mango, peeled
  • and chopped
  • 2 tablespoons freshly
  • chopped coriander
  • 400g tin cannellini beans, washed and drained
