Avocado and Puy Lentil Salad

method

  1. Mix together the dressing ingredients.
  2. Arrange the herb leaves on the plates.
  3. Mix together the salad ingredients (apart from the feta) and divide between the 4 plates. Sprinkle the feta over the top.
  4. Add the dressing.

 

Ingredients

Dressing

  • juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • salt and pepper
  • bag of mixed herb leaves
  • 400g tin puy lentils, drained and rinsed
  • 250g cherry tomatoes, each cut in half
  • 4 spring onions, chopped
  • 1 yellow pepper, chopped
  • 2 ripe avocados, peeled and cut into chunks
  • 1 tablespoon freshly chopped parsley
  • 1 tablespoon freshly chopped coriander
  • handful pine nuts
  • 100g feta cheese, crumbled
