Apple and Celery Soup

Ingredients

  • 25g butter (measured from packet)
  • 1 onion, sliced
  • 1 medium potato, cut into chunks
  • 1 head of celery, trimmed and sliced
  • 1 medium cooking apple, peeled and cut into chunks
  • 2 mugs water + 1 tablespoon concentrated liquid veg stock, or a cube
  • 1 mug milk
  • 1 tablespoon freshly chopped chives
  • salt and pepper

  1. Heat the butter in a large saucepan and add the onion, potato and celery. Fry until the onion begins to soften.
  2. Add the apple, water and stock. Season well with salt and pepper. Bring to the boil and then turn down to simmer for 15 minutes.
  3. Blitz with a hand-held blender. Add the milk and bring back to the boil.
  4. Serve with the chives sprinkled over and some crusty bread, or cheese on toast.

  • Helen Simpson - Dear Ben & Nosh Team Thanks for getting back to me so quickly. Yes, one can have diabetes as either type 1 (the serious form, which requires daily insulin injections etc) or type 2 which should in most cases be controlled by diet. Type 2 is the kind which is becoming pretty much an epidemic because of the epidemic of obesity, which is one of the main causes of type 2. The dietary requirements are pretty much the same for both types: low-cal, low-carb, low-fat (avoid saturates and don't overdo the mono- and polyunsaturates) and no sugar; some type 2 people can have a teensy bit of sugar very occasionally, but better not. There are the usual warnings about avoiding red meat, eating lots of fruit and veg, though not too much fruit in one go, because fructose, though less harmful than ordinary sugar, is still a sugar: moderation in all things. In other words, much the same as a weight-loss regimen, though not using sugar, honey etc for sweetening. Your local GP, or any of the diabetes advice bodies, should be able to let you have detailed diet sheets for both type 1 and type 2. I have looked at several so-called diabetic cookbooks, but most of the recipes are either far too elaborate (OK for a dinner party, but not for a quick weekday supper) or else need ingredients that are too expensive and not easy to find. I yearn for one with quick, easy recipes that don't depend on bloody lentils but use everyday ingredients and don't involve living on lettuce leaves and vegetable soup! If you could come up with a book like that I'd buy it like a shot - and a lot of would-be weight-losers probably would, too. Regards Helen Simpson

  • The Nosh Team - Thanks for your suggestion Helen, we often get asked to write books for different dietery requirments. We wrote NOSH SUGAR-FREE GLUTEN-FREE not so long ago but we didn't have a good grasp of the requirements of a diabetic to market is as such. What foods can a diabetic eat not eat? Also, there are different types of diabetes right? from a dietery point of view, do they all have similar requirements? In terms of low/no sugar can you have fruit sugars? In our sugar-free book, we replaced all the processed sugars with natural sugars, but I am guessing that wouldn't work for you? The reason we haven't written a book for diabetics up untill this point is purly because we do not have first hand knowledge of the condition, so we are uneducated on it...educate us :-)

  • Helen Simpson - Gluten-free recipes probably are of benefit to a small minority of people, but only a small minority. Why do you not provide books of quick, easy and CHEAP recipes for the many millions of diabetics? Not only would that benefit far, far more people but you'd likely make more money, too!
