Almond Cookie Recipe

method

  1. Pre heat the oven to 180ºC fan oven/200ºC/gas 6.  Grease 2 baking trays.
  2. Beat the butter and sugar together until pale in colour.
  3. Add the egg and the almond extract and beat until smooth.
  4. Add the flour and chocolate chips. Gently mix together to form a soft dough.
  5. Divide the mixture into approximately 30 small balls.
  6. Put the coconut and the almonds on a plate and mix together. Press the dough balls into the coconut and almonds.
  7. Place the balls on the baking trays, about 5cm apart as the dough will spread in the oven.
  8. Place inthe oven for 14 minutes until the cookies are pale brown. Leave to cool on the trays. The cookies should be crunchy on the outside and a bit chewy on the inside.

You can freeze these for later…who are we kidding, this is what happened to ours the day after the photoshoot

  • 125g softened butter (measure using packet)
  • 1 mug/210g soft brown sugar
  • 1 egg
  • 1 teaspoon almond extract
  • 1 1/2 mugs self raising flour
  • 100g packet of white chocolate chips
  • 1/2 mug dessicated coconut
  • 1/2 mug chopped toasted almonds
